Southwestern Shepard's Pie

The sweet potato topping can be substituted with white potatoes
- 2 Tablespoons olive oil
- 1 Medium diced onion
- 1 small dice green pepper
- 1 tablespoon minced garlic
- 1 Tbsp chopped green jalapeno
- 1 lb. ground beef
- 1 Tablespoon tomato sauce
- q Tablespoon chili powder
- 1 tsp ground cumin
- 1/2 tsp ground cinnamon
- salt & pepper to taste
- 2 cups tomaotoes chopped
- 1/2 cup frozen corn
- 1/2 cup black beans rinsed
- 1/2 cup cilantro
- 1 1/2 lbs sweet potato peeled and cut into chunks
- 2 Tbsp butter
- 1/2 cup milk
Crock Pot Chicken Taco Chili

This is amazing. You need a large slow cooker
- 1 onion chopped
- 1 16 oz black beans
- 1 16 oz kidney beans
- 1 8 oz can tomato sauce
- 10 oz frozen corn
- 2 14.5 oz cans dice tomatoes with green chillies
- 1 packet taco seasoning( if you don't have just put more spices in)
- 1 Tbsp cumin
- 1 Tbsp chili powder
- 4 boneless skinless chicken breasts
- chopped chili peppers
- 2 bunches cilantro
Eggnog bread

Makes two loaves. This has a great taste and is not too sweet
- 4 3/4 flour
- 4 teaspoon. baking powder
- 3/4 cup sugar
- 1/4 teaspoon salt
- 1/2 teaspoon nutmeg
- 2 beaten eggs
- 2 3/4 cup eggnog
- 1/2 cup cooking oil
- 1 cup pecans
- 1 cup snipped apricots
Boursin Cheese Spread

Great appetizer and it makes a lot
- 1 minced clove of garlic
- 2 (8 oz) pkgs. cream cheese
- 1 cup butter
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon dried dillweed
- 1 teaspoon dried marjoram
- 1 teaspoon dried thyme
- 1 teaspoon black pepper
Emeril's Bacon and Herb Roast Turkey Breast

Emeril uses fresh herbs. They are often expensive so I have substituted dried herbs
- 3 strips thick cut bacon
- 1 1/2 tablespoons minced garlic
- Dust with dry sage
- 1 1/2 teaspoons fresh chopped rosemary
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 3 tablespoons of butter
- 2 teaspoons salt divided
- 1 teaspoon black pepper divided
- 1 ( 5.5 - 6 lb.) turkey breast
Savory Breakfast Casserole

Easy to make and full of flavor
- 1 lb. pork sausage (maple flavor or sage)
- 1 teaspoon dry mustard powder
- 1/2 teaspoon salt
- 6 egg
- 2 cups milk
- 1 1/2 bags cheddar cheese ( at least 4 cups)
- Box of cheddar garlic croutons (Marie Calendar good brand)
Blueberry French Toast Casserole

You can make this the night before and pop it in the oven the next day
- 12 slices of bread 1 inch thick
- 5 eggs
- 2 1/2 cups milk
- 1 teaspoon vanilla
- 1/2 cup brown sugar
- 1/2 tsp. cinnamon
- 1 cup chopped pecans
- 1/4 cup melted butter
- 1/4 cup brown sugar
- 2 cups fresh blueberries
Monster Chocolate Chip Cookies

Big chocolate chip cookies
- 2 cups flour
- 2 cups rolled oats
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups brown sugar
- 1 cup butter
- 2 teaspoons vanilla
- 2 eggs
- 1 bag (12 oz) semisweet chocolate chips
- Add coconut, cherries, walnuts, raisins (optional)
Oriental Salad

Make a salad with the first four ingredients
- Fresh spinach
- 2 green onions
- 1 cup bean sprouts
- 1 can mandarin oranges
- Crisp bacon (optional)
- Dressing:
- clove of minced garlic
- 1/4 cup olive oil
- 2 Tablespoons red wine vinegar
- 2 teaspoons soya sauce
- 1 tsp sugar
Carolyn's Paprika Potatoes

These are addicting!
- 8 Yukon golden potatoes
- 1/2 cup of butter
- 1 cup chopped onions
- 1-2 Tablespoons of Hungarian paprika
- Salt to taste
- 1/2 cup chopped green onions
