Ingrid's Almond Zucchini Cake

Great for using up zucchini in your garden
- 3 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 4 eggs
- 3 cups sugar
- 1 1/4 cups oil
- 1 teaspoon almond extract
- 3 cups grated zucchini
Silver Palate Pecan Pie Modified

This is a delicious pie that you can substitute walnuts for pecans
- 4 eggs
- 3/4 cup dark brown sugar
- 1/2 cup light corn syrup
- 1/2 teaspoon of salt
- 1/4 cup melted butter
- 1 teaspoon vanilla
- 3 cups chopped pecans or walnuts
- 9 inch unbaked piecrust

- Dressing:
- 1/2 cup yogurt

Carolyn's Hungarian Cabbage Rolls

Partially cook the rice. It should be cooked but a bit chewy
- 2 pounds ground pork
- 2 cups white rice
- 1 large diced onion
- 2 Tbsp. butter
- 2 teaspoons Hungarian paprika
- Seasoning salt
- black pepper
- 6 strips hickory bacon
- 9 cloves garlic
- 2 smoked hamhocks
- 2 cabbages
- Sauce:
- 1 large can V-8 juice
- 1 can tomato soup
- 2 sm cans of tomato sauce
Silver Palate Chicken Marabella

This can be made the night before and feeds a lot of people
- 4 chickens, 2.5 lbs each (Thighs work really well and you can do them skinless)
- 1 head of garlic minced or crushed
- 1/4 cup dried oregano
- salt & pepper to taste
- 1/2 cup red wine vinegar
- 1 cup pitted prunes
- 1/2 cup pitted Spanish green olives
- 1/2 cup capers
- 6 bay leaves
- 1 cup brown sugar
- 1 cup white wine
- 1/4 cup parsley or fresh cilantro finely chopped

- 1 cup butter
- 1 egg
- 1 cup white sugar
- 3/4 cup brown sugar
- 1 cup coconut
- 1 cup finely chopped walnuts
- 1/2 tsp salt
- 1 tsp. soda

- 1 tsp vanilla
- 1 1/2 cups flour
- 1 1/2 cups rolled oats

This is a fail proof recipe for delicious dark chocolate cake
- 2/3 cup cocoa powder
- 1/2 cup butter
- 2 cups white sugar
- 2 eggs
- 1 cup hot water (boiling)
- 2 cups flour
- 2 tsp. baking soda
- pinch of salt
- 1 cup sour milk ( add a tablespoon of lemon juice or vinegar to milk)

- 2 bottles Masterpiece BBQ sauce
- 1 cup ketchup
- 1 onion diced
- 1 Tbsp sugar
- 1 Tbsp Dry Mustard
- 1 Tbsp Hot sauce
- 1 Tbsp Pickling spice
- 1Tbsp all purpose seasoning
- 1 tsp Cayenne
- 1 tsp Worchester sauce
- 1/2 can beer
Emeril's Southwestern Turkey and White Bean Chili Simplified

This is a hearty soup that you can make and stretch to feed a lot of people by adding your favorite beans
- 2 cans black navy beans/ 2 cans white butter beans/ 2 cans kidney beans/ 2 cans white navy beans or any other bean you like.
- 2 Tbsp olive oil ( I like to use red pepper olive oil to add some heat)
- 2 cups chopped yellow onion
- 1 jalapeno pepper
- 2 Tbsp minced garlic
- 2 1/2 lbs. ground turkey
- 4 Tbsp Emeril's Southwest Essence, recipe follows
- 1 2/3 Tbsp chili powder
- 1/2 tsp cumin
- 1/4 tsp oregano
- 2 large bay leaves
- 8 cups chicken broth(2 whole containers 64 fl oz)
- 2 (10 ounce ) cans Ro'tel Diced Tomatoes & Green chiles, undrained
- 2 (4 ounce) cans diced green chilies, undrained
- 2 bunches finely chopped cilantro
- Emeril's Southwest Seasoning:
- 2Tbsp chili powder
- 2 tsp ground cumin
- 2 Tbsp paprika
- 1 tsp black pepper
- 1Tbsp ground coriander
- 1 tsp cayenne pepper
- 1 Tbsp garlic powder
- 1 tsp crushed red pepper
- 1 Tbsp salt
- 1 Tbsp dried oregano
- Combine all ingredients and put it in a bottle for later use.
