Fajita Salad

Cut beef across grain into bite-size strips
- 3/4 (375g) boneless, lean beef sirloin steak
- 1 tbsp (15mL) canola or soybean oil
- 2 medium red or green bell pepper, cut into strips
- 1 small onion, thinly sliced
- 4 cups (1L) bite size pieces salad greens
- 1/3 cup (75mL) Italian dressing
- 1/4 cup (50mL) plain yogurt
Grilled Portabella and Bell Pepper Sandwiches

Heat gas or charcoal grill
- 6 medium portabella mushroom caps
- 1 large bell pepper (any colour), cut into 1/4-inch slices
- 1 large red onion, sliced
- 1 tbsp olive or vegetable oil
- 1/2 tsp seasoned salt
- 1 round focaccia bread (8 or 9 inches)
- 1/4 cup mayonnaise or salad dressing
- 1/4 cup basil pesto
- 4 leaves leaf lettuce

- 1 Old El Paso fajita dinner kit
- 12 (8-inch/20cm) metal or wooden skewers (if wooden soak in water)
- 3 tbsp (45mL) vegetable oil
- 1 lb (500g) boneless skinless chicken breasts, cut into 1-inch pieces
- 1 red pepper, cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
