Banana Cupcakes with Cream Cheese Frosting

Preheat the oven to 350 degrees F
- for the cupcakes:
- 4 large eggs
- 1/2 cup butter, softened
- 1 1/2 cups mashed bananas (from 3-4 mashed bananas)
- 1/2 teaspoon vanilla
- 1 1/2 cups cake flour (all-purpose flour can also be substituted)
- 3/4 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- for the frosting:
- 6 tablespoons butter, softened
- 4 ounces of cream cheese, softened
- 2 cups powdered sugar (more as needed)
- 1/2 teaspoon vanilla
- 1 1/2 teaspoons cinnamon
The Best Coffee Cake Ever

Preheat oven to 350 degrees F
- for the cake:
- 1-1/2 stick Butter, Softened
- 2 cups (scant) Sugar
- 3 cups Flour, Sifted
- 4 teaspoons Baking Powder
- 1 teaspoon Salt
- 1-1/4 cup Whole Milk
- 3 whole Egg Whites, Beaten Until Stiff
- for the topping:
- 1-1/2 stick Butter, Softened
- 3/4 cups Flour
- 1-1/2 cup Brown Sugar
- 2 Tablespoons Cinnamon
- 1-1/2 cup Pecans, Chopped

- 1 - 8 ounce Cream Cheese, softened
- 1/2 cup Brown Sugar, packed
- 1/4 cup Granulated Sugar
- 1 teaspoon Vanilla Extract
- 1 - 8 ounce bag Toffee Bits

Coconut Lime Pound Cake

Preheat oven to 350 degrees F
- For The Cake:
- ½ cup (one stick) butter (softened)
- 1½ cups sugar
- ½ cup plain greek yogurt (may sub sour cream)
- 3 eggs
- ½ teaspoon vanilla
- zest of 2 limes
- juice of 1 lime
- 1½ cups flour
- ¼ teaspoon baking soda
- For The Glaze:
- 1½ cups powdered sugar
- juice of 1 lime
- 2 teaspoons coconut extract
- 1-1½ tablespoons heavy cream (or half and half or other milk)
- optional: shredded coconut

To Make Muffins: Centre a rack in the oven and preheat the oven to 400 degrees F
- for the muffins:
- 2/3 cup sugar
- Grated zest and juice of 1 lemon
- 2 cups Gold Medal all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup sour cream or plain Greek yogurt
