Chocolate Stout Cake

For the frosting: In the bowl of a stand mixer beat the softened butter and sour cream until light and fluffy
- For the Frosting:
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup sour cream
- 4 cup semi sweet chocolate chips, melted & slightly cooled
- 4 cups confectioners sugar
- 1/4 cup bourbon
- ½ cup heavy cream
- For the Cake:
- 7 wt oz 72% dark chocolate, chopped (about 1 ½ cups)
- 1 cup (2 sticks) unsalted butter
- 12 ounces Chocolate Stout
- 3 1/4 cups granulated sugar
- 4 eggs + 2 yolks
- ¼ cup canola oil
- 2/3 cup sour cream
- 3 cups flour
- 1 tbs baking powder
- 1 tbs espresso powder
- ¾ cup unsweetened cocoa powder
- 1 tsp kosher salt
Crockpot Honey Sesame Chicken

Season both sides of chicken with lightly with salt and pepper, put into crock pot
- 4 boneless, skinless chicken breasts (thighs would be fine too)
- Salt and pepper
- 1 cup honey
- 1/2 cup soy sauce
- 1/2 cup diced onion
- 1/4 cup ketchup
- 2 tablespoons vegetable oil (could also use olive oil or canola oil)
- 2 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional – doesn’t really add heat, just adds more flavor)
- 4 teaspoons cornstarch dissolved in 6 Tablespoons water
- Sesame seeds
Panera Bread Chicken Noodle Soup

In a large pot over medium heat combine the broth, water, carrots, celery and ground black pepper and allow to cook
- 2 (14 oz.) cans chicken broth
- 2 C. water
- 3 carrots, chopped
- 3 stalks celery, chopped
- 1 pinch ground black pepper
- 3 slices fresh ginger root
- 1 Tbs. vegetable oil
- 1/2 C. chopped cooked chicken breast meat
- 1/2 C. egg noodles
Chicken And Spinach Stuffed Shells

Preheat oven to 350°. Lightly grease two 9×13 baking dishes
- 1 (12-ounce) box uncooked jumbo pasta shells (if all of yours survive the boil this is enough, to be safe you may want 1 1/2 boxes)
- 2 cups chopped cooked chicken - sometimes I leave out the chicken for a meatless dinner
- 2 cups fresh chopped spinach
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (15oz) container ricotta cheese
- 1 (8oz) packages cream cheese, softened
- 1 (5oz) package shredded Parmesan cheese (about 1 2/3 cups)
- 1 large egg, lightly beaten
- 1 Tablespoon dried parsley flakes
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 cups shredded mozzarella cheese, divided
- 1 (26oz) jar prepared spaghetti sauce
Breakfast Omelet Muffins

Preheat oven to 375 F
- 1 pound Italian Sausage (you could also use bacon)
- 1 cup mushrooms chopped and sauteed
- 1/2 cup chopped tomatoes
- 1 red onion chopped and sauteed
- 8 large eggs
- 1/4 cup milk (or half and half depending on how you’re feeling that day)
- 1/2 tbsp vegetable oil
- 1/2 tsp baking powder
- salt and pepper to taste
- Freshly grated Parmesan Cheese as needed
