1.In a heavy large saucepan, brown chicken on high for 3-4 minutes with a little spray oil

- 1 tbsp Sriracha hot sauce (more or less to taste)
- 1/3 cup balsamic vinegar
- 1/3 cup low sodium soy sauce
- 1 tbsp honey (or sugar)
- 3 cloves garlic, crushed
- 1 tsp ginger, grated
- 2 tbsp chives or scallions, chopped
- 1 tsp sesame seeds

- 3 1/2 cups reduced sodium chicken broth (or vegetable for vegetarians)
- Parmesan or Romano cheese rind (optional)
- 1 bay leaf
- 2 tablespoons unsalted butter
- 2 tablespoons flour
- 1/3 cup grated Pecorino Romano cheese
- 1 3/4 cups reduced fat (2%) milk, warmed
- salt, to taste
- black pepper, to taste
Flourless Brownies

Preheat the oven to 350° F
- 1 (14 oz) canned low-sodium black beans, rinsed and drained
- 2 large eggs
- 1/2 cup cocoa powder
- 3/4 cup sugar
- 1/2 teaspoon oil
- 1 tablespoon unsweetened almond milk (or dairy, skim)
- 1 teaspoon balsamic vinegar
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon of freshly ground coffee or instant coffee
- 1 cup semisweet chocolate chips, divided (Hershey's)
Orange Chicken

Directions: Mix the orange sauce ingredients and set aside
- For the Orange Sauce:
- 1/3 cup freshly-squeezed orange juice
- 1/4 cup reduced sodium chicken broth
- 2 tbsp soy sauce (Tamari for gluten-free)
- 2 tbsp raw sugar
- 1 tbsp Chinese rice wine
- 1 tbsp sriracha, or more to taste
- 1 tbsp rice vinegar
- 1/4 teaspoon white pepper
- 2 teaspoons corn starch
- For the chicken:
- 20 oz skinless, boneless chicken breast, cut into small cubes
- kosher salt, to taste
- 1 1/2 tbsp corn starch
- 1 tbsp sesame oil
- 4 cloves minced garlic
- 1-inch grated ginger
- 1 teaspoon grated orange zest
- 2 tbsp chopped scallions
- 1/2 tsp sesame seeds, for garnish

Crock Pot Italian Turkey Meatballs
- Ingredients:
- 20 oz (1.3 lb) ground turkey breast 93% lean
- 1/4 cup whole wheat seasoned breadcrumbs
- 1/4 cup Reggiano Parmigiano cheese, grated
- 1/4 cup parsley, finely chopped
- 1 egg
- 1 large clove garlic, crushed
- 1 tsp kosher salt + fresh pepper
- For the sauce:
- 1 tsp olive oil
- 4 cloves garlic, smashed
- 28 oz cans crushed tomatoes (I like Tuttorosso)
- 1 bay leaf
- salt and fresh pepper to taste
- 1/4 cup fresh chopped basil or parsley
Skinny Taco Dip

In a large bowl combine cream cheese, sour cream, salsa and taco seasoning and mix well with an electric mixer
- Ingredients:
- 8 oz 1/3 less fat Philadelphia cream cheese
- 8 oz reduced fat sour cream
- 16 oz jar mild salsa
- 1/2 packet taco seasoning
- 2 cups iceberg lettuce, shredded fine
- 2 large tomatoes, seeds removed and diced
- 1 cup reduced fat shredded cheddar cheese
- 2.25 oz sliced black olives
Baked Chicken Parmesan

Preheat oven to 450°. Spray a large baking sheet lightly with spray
- Ingredients:
- 4 (about 8 oz each) chicken breast, fat trimmed, sliced in half to make 8
- 3/4 cup seasoned breadcrumbs (I used whole wheat)
- 1/4 cup grated Parmesan cheese
- 2 tbsp butter, melted (or olive oil)
- 3/4 cup reduced fat mozzarella cheese (I used Polly-o)
- 1 cup marinara or Filetto di Pomodoro
