Breakfast Casserole

This is great for a brunch or if the kids have a big sleepover
- Nonstick cooking spray
- 1 pound ground maple pork sausage
- 6 slices soft hearty white bread
- One 8-ounce package shredded triple Cheddar cheese
- 8 large eggs
- 2 cups whole milk
- 1 teaspoon dry mustard
- 1/4 teaspoon salt
- 1/2 teaspoon seasoned pepper
Pot Stickers (Chinese pan fried dumplings)

This recipe for pan-fried dumplings - also known as pot stickers - is easy to make and certain to please everyone ...
- MAKES approx. 40 pot stickers (dumplings)
- 1 package round dumpling wraps (available at Asian food stores, often frozen)
- FILLING:
- 1 pound ground chicken breast, OR cooked shrimp (frozen is fine)
- 1 thumb-size piece ginger, sliced or can use crushed ginger from a jar. I use to taste.
- 3 cloves garlic
- 3 spring (green) onions, sliced
- prepared Cole slaw mix use about 3 or 4 handfuls.
- 1 red pepper cut up in small pieces.
My home made chicken soup

Everyone loves this when it gets chilly out
- FOR THE CHICKEN STOCK:
- 1 Rotisserie Chicken {or roasted}
- 1 large Carrot, roughly chopped
- 1 large Celery Stalk, roughly chopped
- 1 small Onion, roughly chopped
- A couple sprigs of Fresh Parsley, roughly chopped
- 2 sprigs of Fresh Thyme
- 1 Bay Leaf
- A half teaspoon {or so} of Black Peppercorns
- 12 cups Filtered Water
- FOR THE SOUP:
- 2 medium Carrots, peeled and sliced
- 2 medium Celery Stalks, washed and sliced
- 1 small Yellow Onion, diced
- 1 teaspoon Kosher Salt
- 1/2 teaspoon Fresh Ground Black Pepper
- 1 teaspoon chopped Fresh Thyme
- 4 Packets of Natural Liquid Stock Concentrate
- 2 cups Light and Dark Shredded Chicken
- 1 to 2 cups Kluski Noodles
- 1 tablespoon Sea Salt

"These savory pizzas are bathed in a tomato and lamb topping, then cut into wedges to serve
- 1 pound lean ground lamb
- 1 1/2 cups finely chopped onion
- 1/2 cup chopped green bell pepper
- 1 teaspoon minced garlic
- 1 (14.5 ounce) can peeled and diced tomatoes
- 1 (6 ounce) can tomato paste
- 1/2 cup chopped fresh Italian parsley
- 1 teaspoon chopped fresh basil
- 1 tablespoon chopped fresh mint leaves
- 1/2 teaspoon ground cumin
- 1 pinch cayenne pepper (optional)

I grew up in an Italian family
- 1 pound eye of round (ask butcher to slice 1/4-inch thick)
- Olive oil, extra virgin or pure
- Bay leaves
- 2 medium onions
- 1 cup Italian seasoned bread crumbs
- 1/2 cup Parmesan cheese
- 1 teaspoon garlic powder
- 6 to 8 metal skewers
- Hard Salami

The best thing you ever ate but it's a lot of work so you don;t make them often
- top round, butterfly cut and 1/4 thick
- hard boiled eggs, quartered
- pork fat strips (bacon!), 1/4 to 1/2 inch wide and 3-4 inches long
- Hard Salami
- Parmesan and/or Romano cheese, in strips or grated (a mix of both is good) (a couple strips and probably 2 tablespoons)
- parsley, 1/2 a bunch with stems trimmed (but leave some stem)
- onion, 1/2 a good sized sweet onion, cut in long slices
- salt/pepper
- bread crumbs, Italian seasoned (2-3 tablespoons)
- Sugu or Spaghetti sauce as most people say

- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 2 large eggs
- 1 1/4 cups milk
My Home made sugu (spaghetti sauce)

Don't waste money on jars of already cooked sauce when you can have a good home made sauce
- .6 oz fresh basil
- .3 oz fresh oregano
- 3 Tbsp dried basil
- 3 tsp dried oregano
- 3oz chopped panchetta
- 3 Tbsp dried parsley
- 1 tsp crushed red pepper
- 1 ½ tsp coarse ground black pepper
- 3 Tbsp beef base
- 3 Tbsp ground fennel
- 6 tsp sugar
- 6 oz minced garlic (about 15 cloves)
- 9 oz minced sweet onions (about 1 ½ onions)
- 9 oz dry red wine (cab or chianti)
- 3 32 oz cans crushed tomatos
- 3 cups water (rinse out tomato cans)
My Home Made Meatball's

These are my home made meatballs that I make when i make a huge pot of Sugu (recipe included in this book)
- 2 lbs ground beef
- 1 pound of ground pork
- 2 tablespoons garlic, minced
- 2 eggs, beaten
- 1 cup Italian breadcrumbs
- 1 cup dry Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
