Spinach Pie with Feta - Spanakopita

Flaky phyllo sheets are layered with a savory spinach and feta cheese filling
- 2.5 lbs. spinach, chopped (you can substitute frozen, thawed well)
- 1/2 cup olive oil
- 4 large onions, diced
- 2 bunches green onions, diced (incl. 4 inches green)
- 1/2 cup parsley, chopped
- 1/2 cup fresh dill, chopped (substitute 3 tbsp. dried)
- 1/4 tsp. ground nutmeg
- Salt and freshly ground black pepper to taste
- 1/2 lb. feta cheese, crumbled
- 4 eggs, lightly beaten
- 1/2 lb. ricotta or cottage cheese
- 1/4 cup butter, melted
- 1/4 cup olive oil
- 1 lb. phyllo pastry sheets
Traditional Italian Pizzelles

- ½ cup butter melted and cooled
- 2 tsp. baking powder
- 1 tsp. vanilla
- ½ tsp. anise extract
- 1 ¾ cups flour

CANNOLI FILLING

- 32 OZ. whole milk ricotta, drained
- 1 ½ cups confectioner sugar
- 1 ½-2 teaspoons orange zest
- ½ teaspoon almond extract
- 1 teaspoon vanilla
- 2 Tablespoons Disaronno Amaretto
- ¼ cup chopped pistachios
- ¼ chopped maraschino cherries or chopped candied fruit to taste

TIRAMISU

- lady fingers :2 Tablespoons butter
- ¾ cup plus sifted flour
- 2 tablespoons flour
- 4 egg yolks
- ½ cup sugar
- 4 egg whites, beaten until stiff
- pinch of salt
- 1 teaspoon vanilla

- To serve 4-6:
- ½ lb. mascarpone cheese

PANNA COTTA

Panna Cotta is a cold Italian dessert that literally means "cooked cream"
- 4 cups heavy cream (or half-and-half)
- 1/2 cup sugar
- 2 teaspoons of vanilla extract, or 1 vanilla bean, split lengthwise
- 4 Tablespoons Frangelico (hazelnut liqueur)
- 2 packets powdered gelatin (about 4 1/2 teaspoons)
- 6 tablespoons cold water
Classic Italian Lasagna

This is the original way my Nana made her Lasagna & even in my dad's restaurant when he had it
- Bechamel Sauce:
- 5 tablespoons unsalted butter, plus 2 tablespoons for the lasagna
- 1/2 cup all-purpose flour
- 4 cups whole milk at room temperature
- Pinch freshly grated nutmeg
- 1 1/2 cups tomato sauce, recipe follows
- Salt and white pepper
- 1/4 cup extra-virgin olive oil
- 1 pound ground chuck beef
- Salt and pepper
- 1 1/2 pounds ricotta cheese
- 3 large eggs
- 1 pound lasagna sheets, cooked al dente
- 2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
- 3 cups shredded mozzarella
- 1/4 cup freshly grated Parmesan
- Simple Tomato Sauce:
- 1/2 cup extra-virgin olive oil
- 1 small onion, chopped
- 2 cloves garlic, chopped
- 1 stalk celery, chopped
- 1 carrot, chopped
- Sea salt and freshly ground black pepper
- 2 (32-ounce) cans crushed tomatoes

Homemade meat stuffing

This is my Nana's stuffing recipe
- 2 1/2 lbs ground beef, your choice of cut
- 1 lb ground pork, I use Jones Sausage Roll*
- 1 cup large dice celery
- 1 cup large dice onion
- 6 -12 ounces Pepperidge farm onion and garlic croutons/ I always buy an extra bag in case I need more croutons.
- 1 lb butter, you may not need it all
- 1 can whole cranberry sauce
- 1 or 2 apples peeled 7 chopped small
- 2 hard boiled eggs
- 1 pound cooked to nice 7 crispy bacon
- poultry seasoning
- salt
- pepper
- * optional : A handful of chopped pecans
