Rainbow Layer cake

DIRECTIONS 1)Heat oven to 350°F
- 2 boxes Betty Crocker® SuperMoist® vanilla cake mix
- 2 cups water
- 1 cup vegetable oil
- 6 eggs
- 2 packages (2.7 oz each) Betty Crocker® classic gel food colors
- Buttercream Frosting
- 1 cup shortening
- 1 cup butter, softened
- 1 bag (2 lb) powdered sugar
- 2 teaspoons vanilla
- 3 to 4 tablespoons milk

1)Line 9 x 5-inch loaf pan with foil
- 2 cans (14 oz each) sweetened condensed milk (not evaporated)
- 5 boxes (6 oz each) white chocolate baking squares, chopped
- 1 1/4 teaspoons vanilla
- (red, liquid food color blue, green and yellow)

Stuffed Green Peppers

Cook rice according to package directions, or using a rice cooker
- 1 C long-grain brown rice (I used Uncle Ben's Brown Rice, but any long-grain rice will work.)
- 4 large green bell peppers, bottom trimmed, cap end cut off and diced, and seeds removed
- 1 large onion, diced
- 2 tsp. + 1 tsp. olive oil
- 2 links (about 8 ounces) turkey Sweet Italian Sausage (or other sausage of your choice. Use diced mushrooms instead of sausage for vegetarian version.)
- 1/2 tsp. ground fennel
- 1/2 tsp. dried Greek or Turkish oregano
- 1/2 cup grated Parmesan cheese
- salt and fresh ground black pepper to taste
- 1/4 cup grated mozzarella cheese
Weight Watchers Parmesane Chicken Cutlets

Preheat oven to 400 degrees
- 1/4 cup parmesan cheese, grated
- 2 tablespoons dried Italian seasoned breadcrumbs
- 1/8 teaspoon paprika
- 1 teaspoon dried parsley
- 1/2 teaspoon garlic powder
- 1/4 teaspoon fresh ground pepper
- 4 boneless skinless chicken breasts (about 1 pound)
