Kicked Up Kale

Kale is one of the healthiest foods on the planet and it is also very versatile
- 1/2 bunch raw kale (washed, de-stemmed and patted dried)
- 1 tablespoon tahini
- 1 tablespoon water
- 1 tablespoon fresh lemon juice
- 1 tablespoon liquid aminos or tamari
- 1 teaspoon minced garlic (1 -2 cloves of garlic)

Almond Meal Pancakes

- 1/2 cup ground almonds (or storebought almond meal)
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 2 tablespoons xylitol (or use stevia to taste)

- 4 additional organic egg whites

Surprise Smoothie

A classic recipe that has been updated to a healthy version
- 3 cups almond flour
- 2 teaspoons sea salt
- 1 teaspoons baking soda
- 1 tablespoon ground cinnamon
- 1-1/4 teaspoons ground nutmeg
- 1/2 cup erythritol (like Swerve) or spoonable stevia to taste
- 5 large organic eggs
- 1/4 cup melted coconut oil or grape seed oil
- 3 cups shredded carrots
- 1 cup raisins
- 1 cup walnuts, chopped (optional)
Chai Spiced Smoothie

This is great either in the morning or as a dessert
- 1/2 can coconut milk (be sure to get BPA free cans like Native Forest)
- 1/2 cup ice
- 1 scoop Vanilla Perfect Protein
- Pinch cinnamon
- Pinch ground cardamom
- 2-3 whole cloves (or 1/4-1/2 teaspoon ground cloves)
- Pinch ginger
Granny Smith Green Smoothie

- 1 granny smith apple
- Baby spinach or kale
- Juice of 1 lemon plus one sliver of lemon (including peel)
- Stevia to taste
- Coconut water
- Optional: Coconut milk or almond milk, fresh ginger, mint leaves
Tahini Kale

- 2 bunches kale, stems removed and chopped
- 2-3 cloves garlic, minced or pressed
- 3-4 tablespoons of tahini (sesame paste)
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon liquid aminos or tamari
- 1 tablespoon nutritional yeast, optional
- Juice of 1 lemon
Summer Limeade or Virgin Mojito

This recipe has the added benefit of apple-cider vinegar, also known as the ultimate health tonic
- 2 tsp organic apple cider vinegar
- Juice of 1 lime
- 16 oz filtered water
- Stevia to taste (approx 1/2 tsp spoonable stevia- I use Stevita brand)
