- 1 cup packed brown sugar
- 1 ¼ cups oatmeal (quick oats)
- 1 cup whole wheat flour
- ¾ cup all purpose flour
- ¼ cup wheat germ
- ½ tsp baking soda
- ½ tsp baking powder
- ¼ cup unsweetened coconut
- ¼ tsp salt
- 1 ½ tsp anise seed
- ½ tsp fennel seed
- ¼ cup chia seeds
- ½ tsp almond extract
- 1 tsp vanilla
- ¼ cup apple sauce
- 2 Tblsp canola oil
- 2 Tblsp water
- 3 egg whites
- ½ cup dried cranberries
- ½ cup shelled and finely chopped pistachios
- ½ cup chopped dried apricots
Gingerbread Lime Coconut Bars

- Base:
- 2 Tblsp brown sugar
- 2 cups all purpose flour
- ¼ tsp salt
- 1/3 cup sifted powdered sugar
- 1 cup unsalted butter
- 1Tblsp molasses
- 1 teaspoon salt
- 1 teaspoons cinnamon
- 1 ½ teaspoons ground ginger
- 1/3 cup toffee bits (I use Skor)
- Filling:
- 4 eggs, beaten
- 1 ½ cups white granulated sugar
- 2 tsp grated lime zest
- 1/2 cup fresh lime juice (the juice of about 2 limes)
- ¼ cup all purpose flour
- ½ tsp baking powder
- 1 tsp green food coloring
- Optional Toppings:
- #1: Creamy coconut icing:
- 1/2 cup Fine unsweetened coconut
- 2/3 cup icing sugar
- ½ tsp coconut extract
- 2- 8 oz pkg cream cheese
- Green sparkling sugar (sprinkle on as much as desired)
- #2: Colored coconut
- 1 tsp green Food color
- 1 cup sweetened medium flaked coconut
- #3: Green Sparkling sugar- sprinkle on as much as desired
Better For You Butter tarts

This is the lightened up version of my Grandma's famous butter tarts
- Light Whole Wheat Pastry:
- 1 ¾ cups whole wheat flour
- 1 cup all purpose flour
- 1 cup vegetable shortening
- ½ teaspoon baking powder
- 2 tablespoons brown sugar
- 1/3 cup cold water
- 1 tablespoon vinegar
- 3 tablespoons + 2 teaspoons fat and cholesterol free liquid egg replacement
- Butter Tarts:
- 1 tablespoon melted butter
- ½ cup packed brown sugar
- 2 Tablespoons unsweetened applesauce
- 2 Tablespoons fat and cholesterol free liquid egg replacement
- ¼ teaspoon butter flavour
- ½ teaspoon vanilla
- ¼ cup 1% milk
- ¼ teaspoon cornstarch
- 1 teaspoon white vinegar
- ¼ cup raisins or finely chopped pecans
- 12 tart shells (use light whole wheat pastry above)
