Wine Poached Salmon, Peas, Bow Tie Pasta in White Sauce

Preheat oven to 350 degrees
- 1 16 ounce box Farfelle (bow tie pasta)
- 1 1/2 cups frozen green peas
- 1 3/4 cup sour cream
- 4 ounce stick butter
- 1 tablespoon Scotch whiskey 1 cup Parmesan, separated into 3/4 and 1/4 cups
- coarse kosher salt
- cracked black pepper
- For the salmon:
- 3/4 pound salmon, cut into thin 1-2 inch long strips
- 6-10 whole black peppercorns
- 1 small onion, sliced
- 2-3 bay leaves
- 1 cup white wine
- cold water
Baked Potato Skins, Mixed Mushrooms, Cheeses, Greens

Baked Potato Skins, great for a side dish, or as a party appetizer cut in half
- 6 small russet potatoes
- 1 pound mixed fresh crimini and shitake mushrooms
- 1 cup shredded cheddar cheese
- 1/2 cup fresh grated Parmesan cheese
- 1 cup chopped, cooked baby spinach and kale
- coarse kosher salt
- cracked black pepper
- 4 tablespoons butter, approximately
- 2 tablespoons olive oil
Potato and Egg Bake

A great way to use up leftover potatoes after making potato skins
- Scooped out potato from 6 baked potatoes
- 3 tablespoons olive oil
- 2 tablespoons butter
- 1 onion, chopped
- 1 teaspoon fresh thyme leaves (optional)
- 6 eggs beaten
- 1/2 cup half and half (milk may be used)
- pinch or two ground nutmeg
- a few pinches coarse kosher salt and cracked black pepper for potatoes, and for beaten eggs
Crispy Breaded Pork Chops

Preheat oven to 350 degrees
- 8 thin pork chops
- 2 cups fine bread crumbs
- 3/4 cup Parmesan cheese, ground
- 3 eggs, beaten
- 1/4 cup water
- Tabasco sauce, a couple dashes, optional
- 4-5 slices bacon, chopped 2-3 tablespoons butter, or more as needed
- a couple pinches coarse kosher salt
- 1/2 teaspoon plus a couple pinches cracked black pepper
Gazpacho

Ready up the mega power blender
- 4-5 tomatoes cut in half, squeezed of some seeds, chopped
- 1 green pepper, seeded, pith removed, chopped
- 1 cucumber, peeled, seeded, chopped
- 1small yellow onion, peeled and chopped
- 3 cloves garlic, coarse chopped
- 1 cup V-8 vegetable juice cocktail
- 1 teaspoon Worcestershire sauce
- 1/4 cup wine vinegar
- 1 teaspoon kosher salt, more or less according to taste
- For the Condiments
- stale baguette, cubed, sauteed in a few tablespoons canola oil until golden then seasoned with a couple pinches of kosher salt and cracked pepper
- 1 small red onion, chopped
- 1 small cucumber, striped, seeded and cubed
- 1 small green pepper, seeded, pith removed, chopped
