Steak tartare with avocado

Ingredients

  • 8 oz steak tartare
  • 1 ripe avocado
  • 1 shallot, chopped into small cubes
  • 1-2 tbsp capers
  • 4 tbsp mayonnaise
  • 2 tbsp Hot Ketchup
  • 1 tablespoon of Worchester sauce
  • 2 sprigs of chervil
  • 2 chives
  • 2 sprigs parsley
  • salt and freshly ground pepper

Preparation

Step 1

In a bowl put the mayonnaise, ketchup, the Worchester, shallots, capers, salt, 4 grinds black pepper and the chopped herbs

Step 2

Mix with ground beef.

Step 3

Cut into 2 avocado, pit and fill with the tartare. Serve.

INGREDIENTS

  • Bread, in chunks
  • Grated Parmesan
  • 1 Egg
  • Salt and pepper

  • 1 Cup of milk

  • Balsamic vinegar

  • Prosciutto

METHOD

  1. In a bowl, mix together the bread chunks, grated Parmesan, egg, salt, pepper, Italian Seasoning, and cup of milk.
  2. In a pot, combine the sugar and Balsamic vinegar. Bring to a boil until it has reduced (it should be a little thicker).
  3. Slice the cherry tomatoes in half, and place them in a single layer in a baking dish.
  4. Cover the tomatoes with the reduced vinegar and a layer of Prosciutto. 
  5. Cover everything in a layer of the bread mixture, and cook at 350°F for 20 minutes.
  6. Remove from oven, flip upside-down... and enjoy!
