Ingredients
- 2 tortillas
- 10 oz canned kidney beans
- 5 oz pork into small cubes
- 8 oz beef into small cubes
- 1/3 cup grated cheese
- 1 clove garlic, minced
- 1 small onion, thinly sliced
- 1 teaspoon of Tabasco
- 1.5 teaspoon salt
- generous 3/4 cup of hot water
- olive oil
- pepper

Preparation
Step 1
- Brown the meat in a little olive oil. Remove and reserve.
- In the same pan, add onion, garlic, salt, hot sauce and water.
- Add meat. Bring to a boil and lower heat. Cover and cook over low heat for 1:30.
Step 2
- Mash meat with fork and cook uncovered, until mixture thickens slightly.
Step 3
- Drain the beans. Cook over low heat, with the grated cheese until it melts.
- Salt and pepper
Step 4
- Warm tortillas in a skillet.
- On each tortilla, spread 2 tablespoons of beans and 2 tablespoons of meat preparation. Roll and serve immediately.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!
INGREDIENTS:
- 2 chicken breasts
- 1/2 cup of tomato sauce
- 1/2 cup of chives, chopped
- 1 tsp. of Mexican spice mix
- 4 Tortillas
- Cheddar
- Salt, to taste
METHOD:
- Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
- Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
- Fold up tortillas, and heat in a frying pan until golden.
- Enjoy!
