  • 8 roma tomatoes
  • scant 1/4 cup olive oil
  • 1 tbsp sugar
  • 1 sprig rosemary
  • 1.5 oz fresh goat cheese
  • 1 dozen sprig of basil
  • Salt and pepper

Preparation

Step 1

Peel the tomatoes (boil water, dip the tomatoes a few minutes, then cool in order to remove the skin). Cut into 4, then remove the seeds.

Step 2

Arrange on a plate with 2 tablespoons of olive oil and sprinkle with sugar and rosemary (remove once tomatoes are cooked), Salt and pepper.

Step 3

Bake at 325 ° F for 20 minutes. Upon removing from the oven, let cool 20 minutes.

Step 4

Meanwhile, make the sauce by putting basil in a blender with olive oil, some salt and pepper. Mix a few minutes: you must obtain a homogeneous mixture.

Step 5

Assemble: use a round or mold if you have one. Cover the bottom of with tomatoes, then add the goat cheese and finish with another layer of tomatoes. Finally add the basil coulis.

Ingredients

Dough:

  • 2 cups flour
  • 1 cup olive oil
  • 2 tbsp sugar
  • 2 tsp salt
  • 1/4 cup milk
  • Water

 Filling:

  • 1 onion, diced
  • 1 lb ground beef
  • A pinch of salt
  • 1/2 cup water
  • 1 cup tomato sauce

 Method

  1. Mix flour, sugar, salt, milk, and water in a pan, and mix until you form a dough.
  2. In a saucepan, heat a splash of olive oil and add the onion. Cook on medium-high until onion has softened.  
  3. Add the ground beef, and add the salt, water, and tomato sauce. When the meat has browned, remove from heat. 
  4. Dust a flat surface with flour, and roll out the dough into a flat sheet. 
  5. Use a ramekin or cup to cut out circles. 
  6. Add a dollop of beef-tomato mixture to the center of each circle. 
  7. Pinch the dough into a little pocket.
  8. Bake in the oven at 350° F for 15 minutes.
