Ingredients
- one chicken, cut up
- 1-2 green peppers sliced
- 1 large onion sliced
- 1 teaspoon garlic powder
- salt and pepper to taste
- 4 Tablespoons olive oil
- 2 Tablespoons vinegar
- 1/2 cup olives
- 1 teaspoon Adobo
- 3 Bay leaves
- 1 small can tomato sauce
- 1 cup water
- 3/4 cup grape juice

Preparation
Step 1
Add olive oil to pot and heat, season chicken with salt, pepper, garlic powder, and Adobo. Brown chicken on both sides, and remove from pot.
Step 2
In pot cook onion, peppers, and olives until tender, add water if needed.
Step 3
Add chicken back into pot, along with tomato sauce, water, grape juice, vinegar, and Bay leaves.
Step 4
Cook over low to medium heat, for 45 minutes to an hour, or longer if needed for desired tenderness.

INGREDIENTS:
- 2 chicken breasts
- 1/2 cup of tomato sauce
- 1/2 cup of chives, chopped
- 1 tsp. of Mexican spice mix
- 4 Tortillas
- Cheddar
- Salt, to taste
METHOD:
- Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
- Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
- Fold up tortillas, and heat in a frying pan until golden.
