Caramel Apple Dip with Cookie Pie Flakes

This is a fun and fancy sweet treat that is more simple than it is quick, but it's worth the adventure. I turned your traditional apple pie filling into a caramel dip and served alongside cookies that are actually flaky pie crust sticks.
Ingredients
- Ingredients for the caramel:
- 1 honeycrisp apple, chopped, skin on, cored
- 1 tablespoon plus 1/3 cup butter, divided
- 1 tablespoon plus 1/2 cup brown sugar, divided
- 1 tablespoon plus 1/2 cup granulated sugar, divided
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ginger
- 1 tablespoon molasses
- 1/2 cup half and half
- pinch salt
- 1/4 of a lemon’s juice
- 1/4 of a lemon’s zest
- 1 1/2 tablespoons vanilla extract
- Ingredients for the pie sticks:
- 1 cup flour
- 1/2 teaspoon salt
- 1/2 teaspoon sugar
- 6 tablespoons melted butter
- 3 tablespoons half and half, divided
- 1/2 teaspoon vanilla
- 1 egg,
- 1/4 cup sugar-cinnamon mixture (3 parts sugar, 1 part cinnamon)

Preparation
Step 1
For the apple: combine the apple, 1 tablespoon butter, 1 tablespoon brown sugar, 1 tablespoon granulated sugar, 1/2 teaspoon cinnamon, nutmeg, and ginger in a small oven proof bowl. Bake 350F for 1 hour. Then set aside.

Step 2
For the caramel: In a medium saucepan over medium heat, combine 1/2 cup granulated sugar, 1/2 cup brown sugar, molasses, 1/3 cup butter, 1/2 cup half and half , and salt. Cook over medium heat 5-6 minutes until thickened.
Step 3
Pour caramel into blender with apple mixture and puree until smooth. Then return mixture to heat and re-thicken (cook 1-3 minutes). Remove from heat and add lemon juice and zest, 1 1/2 tablespoons vanilla extract and stir well.
Step 4
For the pie sticks: In a small bowl, combine flour with 1/2 teaspoon salt and 1/2 teaspoon sugar. Stir in the 6 tablespoons melted butter, 2 tablespoon half and half, and 1/2 teaspoon vanilla. Mix until flour mixture is moistened. Using your hands, place dough on a buttered baking sheet and spread out into a rectangle shape. Combine the egg with the 1 tablespoon half and half and whisk. Brush the egg wash over the dough. Then sprinkle with half of the cinnamon sugar mixture.
Step 5
Bake in 425F oven for 20 minutes. Then remove from oven and cut into 3/4 inch wide strips. Flip each strip over and brush this side with egg wash and sprinkle with remaining cinnamon sugar mixture. Return to oven for another 15 to 20 minutes until sticks are flaky, golden and crispy but not browned or burnt.
Step 6
Serve pie sticks with caramel apple pie dip. Enjoy!

Chef Tips and Tricks
These salted caramel thumbprint cookies are easy to make and super delicious!
INGREDIENTS:
- 1/4 cup / 50g of softened butter
- 1 egg (divide the yolk and white)
- 1/4 cup / 50g of sugar
- Pinch of sea salt
- 1 cup / 150g of flour
- 1 cup / 100g of chopped nuts
- Salted caramel
- Melted dark chocolate
METHOD:

In a bowl, mix together the butter, egg yolk, sugar, and salt.

Add the flour and mix. Roll into a ball.

Chill for 30 minutes.

Remove from refrigerator. Divide the dough and roll into 1-inch balls.

Dip each ball in egg yolk, and then roll in chopped nuts.

Place on baking sheet (lined with parchment paper), and press your thumb into the center.

Bake at 340°F/170°C for 12 minutes, or until golden.

Remove from oven and let cool.

Pour the salted caramel into the center groove,and drizzle with dark chocolate.
