Step 1
Thoroughly clean your cornish game hen and roast in the oven for 90 minutes on 325-350 degrees
Step 2
While the hen is slow roasting, dice 3 Russet Potatoes into 1 inch thick chunks, dice 2 carrots into 1 inch thick pieces, and mince a handful of parsley as fine as you can get it
Step 3
In a bowl, place 9 slices of wheat bread. Cut 2 sticks of celery into 1/2 inch pieces and add the cut celery pieces to the wheat bread. Next, pour about 1/3 cup of milk and manually mash the mixture into a stuffing
Step 4
Pull your cornish game hen from the oven and add the diced potatoes and carrots. Generously drizzle with olive oil and sprinkle your finely minced parsley on top. Place back in the oven to roast for another half hour
Step 5
In a separate baking dish, lightly grease the baking dish and place your stuffing mixture and bake for 30 minutes
Step 6
Now, your divine cornish game hen and farm fresh veggies are ready as well as your home made stuffing
