Ingredients
- 1. Green Eggplant - 5
- 2. Cumin seeds - 0.5 tsp
- 3. Mustard seeds - 0.25 tsp
- 4 Red chillies - 2
- 4. Ginger paste - 1 tsp
- 5. Green chillies paste - 1 tsp
- 6. Bengal gram - 0.5 tsp
- 7. Tamarind paste - 0.25 tsp
- 8. Turmeric powder - 0.25 tsp
- 9. Coriander leaves - 0.25 bunch
- 10. Salt to taste

Preparation
Step 1
1. Cut green eggplant, boil with turmeric powder and salt.
2. In a Non-stick pan, add oil, mustard seeds, Bengal gram, cumin seeds, red chillies, ginger paste and green chili paste.
4. Add green eggplant in the pan with tamarind paste and coriander leaves. Mix well.
5. Put lid and switch off the stove.
