Preparation

Step 1

Place the pork loin on a large piece of aluminum foil (enough to wrap all the way around the loin and seal it)

pour the liquid smoke and soy sauce on the roast. sprinkle whole roast with the rock salt.

Lay whole bananas on top of roast and then wrap roast with large romaine lettuce leaves. This will help to seal in moisture.

Step 2

Wrap roast in the foil and then wrap it a few more times using more foil, making sure all liquid will remain inside.

Step 3

Place wrapped pork in a 9 X 13 pan to catch the juices that will still probably leak during baking. Bake at 500 degrees the first hour and then lower temp to 400 degrees and continue cooking for 4 more hours.

Step 4

When done cooking, remove foil and bananas and leaves. You will be left with the most awesome pork roast you have ever tried.
