Ingredients

  • 2 to 3 cups leftover pork roast diced
  • 1 large onion diced
  • 6 potatoes peeled and diced
  • 1 can mixed vegetables
  • salt and pepper to taste
  • 3 tbsp. corn starch or enough to thicken
  • 3 cups water or chicken stock (I use water)

Preparation

Step 1

Put pork roast, onion, potatoes, water or stock, salt and pepper in large pot. Bring to boil and cook until potatoes are done. Then add mix vegetables. Bring back to a boil. Add enough cornstarch to thicken.
