Ingredients
- 2 to 3 cups leftover pork roast diced
- 1 large onion diced
- 6 potatoes peeled and diced
- 1 can mixed vegetables
- salt and pepper to taste
- 3 tbsp. corn starch or enough to thicken
- 3 cups water or chicken stock (I use water)

Step 1
Put pork roast, onion, potatoes, water or stock, salt and pepper in large pot. Bring to boil and cook until potatoes are done. Then add mix vegetables. Bring back to a boil. Add enough cornstarch to thicken.
