Ingredients
- 2 10 inch tortillas
- 2 cups regfrigerated egg
- 1/2 cup shredded cheese
- 1/4 cup chopped cilantro
- 2 tablespoons chopped jalapeno peppers
- 1/8 teaspoon ground black pepper
- 1/4 cup sour cream
- 2 jarred red peppers, cut into thin strips
- 1/2 cup salsa

Preparation
Step 1
Preheat oven to 350, Wrap tortillas in foil, bake untill heated through, about 5 minutes.
Step 2
Meanwhile in a bowl combine eggs, cheese, cilantro, jalapeno peppers, and black pepper, mix well.
Step 3
Spray nonstick skillet, add red peppers and ham to skillet, cook well stiring until heated through. Add egg mixture reduce heat to low, cook stiring untill mixture thickens about 5 minutes.
Step 4
Place 1 tortilla on a cutting board, spoon egg mixture on to top press remaning tortilla on top, cut into quarters.

Ingredients
- Pizza Dough (homemade or store bought)
- Shredded cheese
- Pizza sauce
- Cured ham, shredded
- 4 eggs
- Cherry tomatoes
- Fresh basil
Method
- Roll out the dough
- Use a small bowl to cut the dough into rounds
- Add shredded cheese
- Place in oven on an oven tray afr 10 min at 355°F
- Put each dough round into a ramekin
- Add 1 tbsp pizza sauce, a handful of shredded cured ham
- Break an egg into each pizza
- Top with sliced cherry tomatoes and a basil leaf
- Place in oven for another 15 mins at 355°F
- Garnish with parsley and a pinch of pepper
- Serve and enjoy!
