The Veal Burger

Ingredients
- 4 burger buns
- 1 lb ground veal shoulder
- a couple slices of mimolette cheese*
- 1 slice of ham
- 2 tsp Ketchup
- 1 tsp Savora**
- 1 tsp sweet mustard
- 1 tomato
- *If you cannot find french mimolette cheese substitute for a very aged cheddar.
- ** More complex than traditional mustard this french 11 spice condiment can be found in gourmet groceries and ordered online. Can also substitute with regular mustard.

Preparation
Step 1
Wash and peel vegetables. Cut the ham into small cubes.
Step 2
Mix the veal, ham, ketchup, savora, salt, pepper and cumin, and form 4 patties the size of the bread.
Step 3
Cut 8 thin slices red onion, 8 tomato, 12 slices of pickles and parsley leaves.
Step 4
Sauté the steaks in a pan with olive oil, keeping them just pink. Meanwhile, toast the bread, and slice cheese.
Step 5
Assemble the burger in this order: bread- sweet mustard -1 slice of onion-1 tomato slice, 3 slices of pickles, a few leaves of parsley-meat-a few leaves of parsley-cheese slices -3 slices of pickle, a slice of onion, a slice of tomato- sweet mustard, bread.
Step 6
Serve immediately!

Ingredients
- Ground meat
- Coriander, chopped
- Onions, minced
- Egg
- Salt
- Ground Pepper
- Cheddar (cube and slice)
- Canola Oil
Method
Chop coriander and mince onions
Mix the meat, coriander, onions, pepper and salt in a large bowl
With your hands, shape the meat into a large ball
On a clean surface, flatten the ball and place a cube of cheddar on top
Cover the cheese with the edges of the meat, creating a ball again
Place in a pan and let one side simmer in canola oil
Flip the patty and place a slice of cheddar on top
Place the lid on the pan and let cook to desired texture
Put the patty in a bun with your favorite toppings. Enjoy!
