Chicken Francinette

Ingredients
- 4 chicken breasts.
- corn (about 10 oz)
- 2 tablespoons chopped tarragon
- fresh parsley.
- Almost 1/2 cup dry white wine (optional).
- 2 tablespoons mustard
- 2/3 cup sour cream
- salt
- pepper
- Soy sauce caramelized.
- 2 tomatoes.
- 1 zucchini
- 1 tablespoon olive oil.
- 3 tablespoons of sunflower oil.

Preparation
Step 1
Place the chicken in a dish, salt and pepper. Put 1 tablespoon of olive oil in a frying pan and cook the white chicken for 10 minutes, add the white wine (or water if you prefer) and sprinkle with tarragon and parsley, add the mustard and the sour cream and simmer for 5 minutes over low heat, stirring occasionally.
In a bowl, put corn and tomatoes cut into cubes.
Step 2
In another frying pan, put 3 tbsp. of olive oil, add the zucchini cut into slices. Sauté with soy sauce, caramelize adding a little water from time to time. Salt according to taste and pepper.

INGREDIENTS:
- 2 chicken breasts
- 1/2 cup of tomato sauce
- 1/2 cup of chives, chopped
- 1 tsp. of Mexican spice mix
- 4 Tortillas
- Cheddar
- Salt, to taste
METHOD:
- Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
- Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
- Fold up tortillas, and heat in a frying pan until golden.
