The Most Creative Ways to Cook Chicken This Fall

A roast chicken is often associated with an Easter Sunday lunch or seen as a light, tasty family dinner option during the spring months. 

But chicken is available all year and along with pumpkin spice and your fave sweater, it can make fall just a little more comforting!

From a hot bowl of soup, to a hearty stew; chicken works with a heap of other fall veggies and ingredients.

Spiced Chicken Skewers

As the nights turn colder, we sometimes need a little bit of spice to warm us up! These chicken skewers do just that, and work really well with rice. For a little extra zing, squeeze half a lime over the rice before serving. Yum!

Ingredients (for 4 people):

  • 1 lbs. skinless chicken breast (cut into 3/4-inch cubes)
  • 1 lemon (squeezed)
  • 1 tsp curry powder
  • 1 tsp paprika
  • 3 tbsp olive oil 
  • Salt and pepper 
  • Bamboo sticks

Instructions:

  1. In a bowl, mix the lemon juice, curry powder, paprika, salt and pepper and olive oil.
  2. Stir well to combine, before adding the chopped chicken breast.
  3. Marinate in the fridge for 2 hours.
  4. Preheat the oven to 375 °F. While the oven is warming up, thread the chicken onto bamboo sticks.
  5. Bake for 30 min.

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
