Maple-Glazed Bacon Apple Scones

Both cooked bacon and cold bacon fat give these scones a smokey bacon flavor and meltingly tender crumb. These scones bake up light and fluffy, with moist pockets of sweet apple and a distinctly smokey flavor from the bacon that blends beautifully with the earthy maple and whole grain flour. The glaze adds a sweet counterpoint. The scones are extra-pretty when made with pink pearl apples, but any tart baking apple will do.
