Quick & Healthy Yogurt Berry Popsicles
Who else is ready for popsicle weather? As the temperatures rise, nothing cools us off like a refreshing chilled treat. You only need a handful of ingredients for these homemade strawberry-raspberry popsicles that are made healthier with Greek yogurt and reduced sugar.
Ingredients for 6 popsicles:
- 1 cup plain Greek yogurt
- Zest of 1 organic lemon
- 1 tsp vanilla extract
- 1/2 cup fresh strawberries
- 1/2 cup fresh raspberries
- 3-4 tablespoons reduced sugar strawberry jam
- 3 -4 tablespoons reduced sugar raspberry jam
- 6 popsicle molds
- 6 popsicle sticks
Instructions
- In a bowl, add the Greek yogurt with the lemon zest and vanilla extract. Mix well to combine. Set aside.
- Thinly slice the strawberries and halve the raspberries. Divide the fresh fruit among the popsicle molds and gently press them into the sides.
- Evenly distribute the yogurt mixture among the 6 molds. Add 1-2 tbsp strawberry jam to 3 of the molds and 1-2 tbsp raspberry jam to the other 3. Stir the yogurt and jam together to create a marbling effect.
- Insert the ice cream sticks into the molds and place in the freezer for at least 4 hours.
- When ready to serve, remove the molds from the freezer and let thaw for 10 min. or pass them briefly under hot water.
- Remove the popsicles from the molds, and serve!

- 1 egg (divide the yolk and white)
- 1/4 cup / 50g of sugar

METHOD:

In a bowl, mix together the butter, egg yolk, sugar, and salt.

Bake at 340°F/170°C for 12 minutes, or until golden.

Remove from oven and let cool.

Pour the salted caramel into the center groove,and drizzle with dark chocolate.
