7.  Messing Up the Caramel

Caramel is a great way to fill sandwich cookies, but if your caramel is grainy, it means the sugar crystallized in the pot. Sugar crystallizes when heated if the water has evaporated, so be sure the water to sugar ratio is proportionate as it melts. Do not stir the sugar-water mixture—only stir butter and cream into it. Just keep an eye on it, and let it do its thing.
