Don't Shy Away From Onion & Garlic

Onion is a standard ingredient in modern guacamole, but the type of onion you use will depend on your personal preference. Red onion is sweeter and gentler in flavor than the sometimes acrid yellow onion, while white onion strikes a nice balance between the two. Spring onions or shallots can also be substituted, as both will bring a nice clean flavor to your guacamole. That being said, we prefer red for its flavor and the pop of color it provides against the avocado. Be sure to mince it finely, so it doesn't overpower the rest of the ingredients. And unless you're averse to garlic, don't be afraid to add one finely chopped clove for added flavor dimension.

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
