Overworking the Batter

Getting your batter to the right consistency is a critical step. You want to make sure it sticks to the food properly and won't slip off or fall apart while cooking. Here's what you need for the perfect batter: take a large glass bowl, and fill it with ice cubes. Nestle a mixing bowl into the ice, filled with 2 beaten egg yolks and some cold water. Stir constantly, and gradually add in 2 cups flour, using a whisk. Add a pinch of salt. Do not overwork the batter—there should be some small lumps of flour left at the end. Tip: the colder it is before frying, the better. Let cool in the fridge for longer, if necessary.
