Once drained, you should never cover fried foods. Doing so will create moisture, turning the crust soft and wet and eliminating that crispy "fried" feel. Instead, once fried, place the food on paper towels to remove excess oil, then lightly season with salt. Serve immediately. It's not advisable to prepare fried foods in advance, as the texture and taste won't be the same.
