Gumbo

There are two main kinds of gumbo, meat and seafood, but the seafood one is the most well-known outside of Louisiana. The first gumbo recipe appeared in a cookbook in 1802, and the stew was invented—or at least elaborated on—by West African slaves. The name "gumbo" comes from their word for "okra," an integral part of many recipes.
