Strawberry Rhubarb Jellies

Looking for a sweet DIY treat to serve for special occasions and holidays. Try these easy strawberry rhubarb jellies.

Ingredients:

  • 1/2 lb. strawberries
  • 1/2 lb. rhubarb 
  • 1 cup sugar
  • 2 1/2 tbsp lemon juice
  • 18 gelatin sheets
  • 1 cup powdered sugar
  • 2 tsp cornstarch 


Preparation:

  1. Wash and hull the strawberries. Wash and roughly chop the rhubarb. Set aside. 
  2. In a bowl, soak the gelatin sheets in cold water for 10 min.
  3. Add the strawberries and rhubarb to a saucepan and simmer over low heat for 30 min.
  4. Using an immersion blender, process the fruits into a fine puree.
  5. Add the sugar and lemon juice and simmer over low heat for another 10 min.
  6. Add the drained gelatin and mix again with the immersion blender.
  7. Place a square cake ring on a baking sheet and line the inside with cling film to prevent the fruit jelly from spilling out. Pour the mixture into the frame and store in the fridge for at least 6 hours.
  8. In a bowl, mix the powdered sugar with the cornstarch. Cut the jelly into squares and dip into the mixture to coat.
  9. Enjoy!

Ingredients

  • 7-9 medium-sized strawberries
  • 1 puff pastry
  • 1 chocolate bar
  • 1 egg yolk
  • Almond slivers
  • Powdered sugar

Method

  1. Preheat oven to 350°F.
  2. Cut the strawberries into halves.
  3. Dust some flour on a flat surface and spread your puff pastry out on top, smoothing it into a rectangle shape if necessary.
  4. Place the bar of chocolate in the center, then top with a layer of strawberry halves.
  5. Using a pizza cutter or a knife, slice the edges of the puff pastry into strips that can be wrapped over the chocolate and strawberries. Starting with the flap at the top, fold over each strip in a slightly diagonal direction so that they resemble a braid.
  6. Brush the braid with a beaten egg yolk so that it covers the entire visible surface.
  7. Sprinkle almond slivers on top.
  8. Bake for 20-22 minutes.
  9. Give the braid a few minutes to cool down, then cover with a dusting of powdered sugar.
  10. Serve and enjoy!
