Pumpkin is packed with minerals such as iron, potassium, and magnesium. It also contains beta carotene (which gives it its color, just like carrots!) that has an anti-inflammatory effect and can support eyesight. 

Even better, the chunky squash contains amino acid tryptophan too which helps produce the happiness hormone serotonin. If that isn't a good enough reason to put pumpkin on the menu, we don't know what is!
