Bang Bang Noodles’ Garlic Szechuan Garlic Noodles

Coachella-goers and lovers of spicy noodles indulged their cravings with LA's Bang Bang Noodles' Chinese hand-pulled noodle bowls. With Szechuan peppercorns and chili oil, you get a delicious fiery kick, while the wide flat noodles serve as the perfect base for the flavorful and addictive sauce. Try the dish at home with this simple recipe that you can easily adjust to your spice tolerance.

Ingredients (for 2 servings)

  • 8 oz flat vegan noodles (such as wide rice noodles or wheat noodles)
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1 tbsp soy sauce
  • 1/2 tbsp chili oil (adjust to taste for desired spice level)
  • 1/2 tbsp rice vinegar
  • 1/2 tsp Szechuan peppercorns, crushed
  • 1/2 tbsp maple syrup or brown sugar (optional, for a touch of sweetness)
  • Salt to taste
  • Chopped green onions and sesame seeds for garnish

Instructions:

  1. Cook the noodles according to the package instructions until they are al dente. Drain and rinse under cold water to stop the cooking process. Toss the noodles with 1/2 tbsp sesame oil to prevent sticking, and set aside.
  2. In a small bowl, whisk together the minced garlic, grated ginger, soy sauce, chili oil, rice vinegar, crushed Szechuan peppercorns, and maple syrup or brown sugar (if using). Adjust the seasoning to taste and set aside.
  3. Heat the remaining 1/2 tablespoon of sesame oil in a large skillet or wok over medium heat.
  4. Once the oil is hot, add the prepared sauce to the skillet. Cook for 1-2 min., stirring constantly, until the garlic and ginger are fragrant.
  5. Add the cooked noodles to the skillet and toss to coat them evenly with the sauce. Cook for an additional 2-3 min., stirring frequently, until the noodles are heated through and well coated with the sauce. If the noodles seem too dry, you can add a splash of water or vegetable broth to loosen them up.
  6. Transfer the Szechuan Garlic Noodles to serving plates or bowls. Garnish with chopped green onions and sesame seeds for added flavor and texture.
  7. Serve hot, and enjoy the spicy, garlicky goodness!
