Losing Control of the Fire

A good fire is a truly mesmerizing thing, but even as our primal urge to cook meat on a hot fire is being satisfied, an out-of-control fire can invoke panic. The good news that is unless you added a large amount of petrol to your barbecue, the odd leaping flames are probably nothing to worry about. The trick is knowing what is a "good flame" and a "bad flame." Black, acrid smoke coming from burnt BBQ sauce that's been on the grill for too long is bad. Flames leaping up in response to fat dripping from a nice big hunk of meat or fish? That's good. Harness the power of the flame for truly delicious barbecued meat.

These tasty stuffed cabbage rolls are so easy! 

Ingredients

  • 1 onion
  • 5 - 6 thick rashers bacon
  • 1/2 lb sausage meat
  • 1/2 cup tomato paste
  • 2 cloves garlic, diced
  • 2 bell peppers, diced
  • Salt
  • 1 cabbage head


Method

  1. Fry the bacon in a skillet, then add onion, and meat.
  2. Add tomato paste, bell peppers, garlic and salt, and simmer till cooked through
  3. Boil 1 whole cabbage head in salted water till tender
  4. Spoon mixture into individual cabbage leaves, and fold carefully to form little rolls
  5. Serve with any remaining mixture
  6. Enjoy!
