Yellow squash casserole is a comforting and flavorful dish that combines tender yellow squash, earthy mushrooms, and fluffy rice, all baked together with a creamy blend of cheeses. Ingredients (for 4 servings):

  • 2 cups cooked white or brown rice
  • 2 medium yellow squashes, sliced
  • 1 cup mushrooms, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sour cream
  • 1 large egg
  • 1/2 tsp dried thyme
  • 1/2 tsp dried basil
  • Salt and black pepper to taste
  • 1/2 cup breadcrumbs (optional, for topping)
  • 2 tbsp chopped fresh parsley (for garnish)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the diced onion and cook for 3-4 min. until softened.
  4. Add the minced garlic and cook for another minute until fragrant.
  5. Add the sliced yellow squash and mushrooms, and cook for 5-7 min. until the vegetables are tender. Season with salt and black pepper. Remove from heat.
  6. In a large bowl, combine the cooked rice, sautéed vegetables, shredded cheddar cheese, grated Parmesan cheese, sour cream, and the egg. Stir in the dried thyme and dried basil. Mix well.
  7. Transfer the mixture to a greased casserole dish.
