These Delicata Squash Boats are a delightful and healthy dish, perfect for a cozy meal. Roasted Delicata squash halves are filled with a flavorful mixture of chickpeas, kale, and onions, seasoned with cumin and smoked paprika. Topped with optional Parmesan cheese and fresh parsley, these boats make a nutritious and satisfying meal for two!

Ingredients (for 2 servings):

  • 1 medium Delicata squash
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 1 cup canned chickpeas, drained and rinsed
  • 2 cups chopped kale (stems removed)
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tbsp lemon juice
  • 2 tbsp grated Parmesan cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Cut the Delicata squash in half lengthwise and scoop out the seeds.
  3. Brush the inside of the squash halves with olive oil and season with salt and black pepper.
  4. Place the squash halves cut-side down on a baking sheet lined with parchment paper.
  5. Roast in the oven for 20-25 min. or until the squash is tender and easily pierced with a fork.
  6. While the squash is roasting, heat the remaining olive oil in a large skillet over medium heat.
  7. Add the chopped onion and sauté for 3-4 min. until it begins to soften.
  8. Add the minced garlic and cook for another minute, until fragrant.
  9. Stir in the chickpeas, chopped kale, ground cumin, and smoked paprika. Cook for 5-7 min. until the kale is wilted and the chickpeas are heated through.
  10. Add the lemon juice and season with salt and black pepper to taste.
  11. Once the squash is done roasting, remove it from the oven and carefully turn the halves over.
  12. Fill each squash half with the chickpea and kale mixture, pressing it down gently to pack it in.
  13. If using, sprinkle the grated Parmesan cheese over the top of the filling.
  14. Return the stuffed squash to the oven and bake for an additional 10 min. until the filling is heated through and the cheese is melted and golden.
  15. Remove the squash from the oven and let it cool slightly before serving.
  16. Garnish with chopped fresh parsley, serve warm, and enjoy!
