Ingredients (for 2 large quesadillas):

  • 4 large flour tortillas

  • 1 cup shredded Oaxaca or mozzarella cheese
  • Salt and black pepper to taste
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder

Instructions:

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the diced onion and sauté for 3-4 min. until softened.
  3. Add the minced garlic and cook for another minute, until fragrant.
  4. Add the squash blossoms, ground cumin, and chili powder. Season with salt and black pepper to taste.
  5. Cook for 2-3 min. until the squash blossoms are wilted. Remove from heat and set aside.
  6. Place two tortillas on a flat surface. Sprinkle half of the shredded cheese evenly over each tortilla.
  7. Divide the squash blossom mixture between the two tortillas, spreading it evenly over the cheese.
  8. Sprinkle the remaining cheese over the squash blossom mixture. Top each with another tortilla.
  9. Heat a large skillet or griddle over medium heat. Carefully transfer one quesadilla to the skillet and cook for 2-3 min. on each side, until the tortilla is golden brown and the cheese is melted.
  10. Repeat with the second quesadilla.
  11. Cut each quesadilla into wedges.
