Pumpkin Tacos
Pumpkin tacos are a unique and flavorful twist on traditional tacos. Cubes of sautéed pumpkin are cooked with vegetables, onions, and chili powder, creating a filling that's savory, lightly spiced, and hearty. Served in warm tortillas, these tacos are perfect for a quick, satisfying meal with a seasonal twist.
Ingredients (for 4 servings):
- 2 cups pumpkin, peeled and cubed
- 1 bell pepper, sliced
- 1 small onion, diced
- 2 tbsp olive oil
- 1 tsp chili powder
- ½ tsp cumin
- ¼ tsp smoked paprika
- Salt and pepper to taste
- 8 small tortillas, warmed
- Optional toppings: avocado slices, purple cabbage, chopped cilantro, lime wedges, or salsa
Instructions:
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook for 3-4 min. until softened.
- Add the cubed pumpkin, chili powder, cumin, and smoked paprika. Sauté for 8-10 min., stirring occasionally, until the pumpkin is tender.
- Stir in the black beans and cook for an additional 2-3 min., until heated through. Season with salt and pepper to taste.
- Serve the pumpkin mixture in warm tortillas, adding your favorite toppings such as avocado, cilantro, or a squeeze of lime.
