Greece: Strapatsada

If you’ve ever been to Greece, you might have tried Strapatsada. This scrambled egg dish stands out with feta cheese and other fresh ingredients. Traditionally served for breakfast, it’s also enjoyed at other meals.


Ingredients (serves 4):

  • 1 onion
  • 2 2/3 cups of chopped tomatoes
  • 4 eggs
  • 7 oz of feta cheese
  • Salt, pepper, and oregano for seasoning

Instructions:

  1. Peel and dice the onion. Wash the tomatoes, halve them, and grate the cut side into a bowl using a kitchen grater to create a smooth tomato pulp.
  2. Heat some oil in a pan and sauté the onions until softened. Add the tomato pulp and oregano, and simmer over medium heat for a few minutes.
  3. Meanwhile, crack the eggs into a bowl, whisk, and season with salt and pepper.
  4. Once the tomato mixture has reduced slightly, pour the eggs into the pan and stir them into the tomatoes. Increase the heat slightly and let the eggs set for about a minute. Continue stirring and cooking until the Strapatsada reaches your desired consistency.
  5. Crumble the feta over the finished Strapatsada and serve, optionally with fresh bread.

Ingredients

Makes 6

  • 1/2 cauliflower head
  • 8 eggs for cauliflower mix
  • Pepper
  • Salt
  • 4-6 cups shredded cheese
  • 6 slices salami
  • 6 tbsp pizza Sauce

 

Method

  1. Boil diced cauliflower in salted water until tender.
  2. Blend, then transfer to mixing bowl.
  3. Mix in 2 eggs, pepper and 2 cups of shredded cheese
  4. Share the cauliflower mixture out between 6 ramekins, forming little cups
  5. Add 1 cup of shredded cheese
  6. Bake for 25 min at 375°F
  7. Add a slice of salami, a tbsp of pizza sauce, and one raw egg to each ramekin
  8. Top with cheese and return to oven for 7 min at 375°F
  9. Serve, and enjoy!
