Mexico: Huevos Divorciados

Huevos Divorciados, or "Divorced Eggs," is one of Mexico’s most iconic breakfast dishes. Mexicans are known for their love of eggs, as seen with their globally famous Huevos Rancheros. After trying our recipe for Huevos Divorciados, you’ll understand why Mexican egg dishes are so beloved!


Ingredients (serves 2):

  • 1/2 onion
  • 2 jalapeño peppers
  • 2 garlic cloves
  • 5 tomatillos (green tomatoes)
  • 5 sprigs cilantro
  • 1 tsp salt
  • 2 tbsp olive oil
  • 4 large eggs
  • 1/2 cup crumbled feta cheese
  • Cilantro for garnish
  • Salt and pepper to taste

Instructions:

  1. Place the peeled onion (halved), jalapeños, peeled garlic, and tomatillos in a medium pot. Cover with water and bring to a boil over high heat. Reduce the heat to low, cover, and simmer for 5 minutes. Drain and set aside.
  2. Blend the cooked tomatillos with 1/2 of the onion, 1 jalapeño, 1 garlic clove, and 1/2 tsp salt until smooth.
  3. Heat 1 tsp olive oil in a small pot over medium-high heat. Carefully add the blended salsa, stirring frequently, and simmer for 1 minute. Transfer to a bowl, season with more salt if needed, cover, and set aside.
  4. Blend the remaining cooked onion half, 1 jalapeño, 1 garlic clove, 5 sprigs of cilantro, and 1/2 tsp salt until smooth.
  5. Heat the remaining 1 tsp olive oil in another small pot over medium-high heat. Carefully add the blended green salsa, stirring frequently, and simmer for 1 minute. Transfer to a bowl, season with more salt if needed, cover, and set aside.
  6. Heat a little olive oil in a frying pan over medium heat. Crack the eggs into the pan and fry for about 3 minutes or until the whites are set.
  7. Place 2 fried eggs on each plate. Spoon the red salsa around one egg and the green salsa around the other, symbolizing their "divorce." Garnish with crumbled feta cheese and chopped cilantro.
  8. Serve your Huevos Divorciados with a side of refried beans, placed between the eggs for the perfect accompaniment.

  8. Top with cheese and return to oven for 7 min at 375°F
  9. Serve, and enjoy!
