Ingredients (for 6 eggs):

  • 3 tbsp cornstarch
  • 6 boiled chicken eggs
  • 1 cup water
  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1/4 cup annatto seeds
  • 2 cups cooking oil

Instructions:

  1. Place the cornstarch in a bowl and lightly coat the boiled chicken eggs. Set aside.
  2. Combine flour, salt, and pepper in a mixing bowl. Stir well to evenly distribute the seasoning.
  3.  Soak the annatto seeds in water until the water turns a rich reddish color. Strain the liquid and mix it with the flour mixture to form a smooth batter.
  4. Add the boiled eggs to the batter and ensure they are evenly coated.
  5. Heat the cooking oil in a pan over medium heat.
  6. Carefully fry the coated eggs in the hot oil until the batter turns crisp and golden.
  7. Remove the eggs from the oil using a slotted spoon and place them on a serving plate lined with paper towels to drain excess oil.
