Potato Waffles

Give your leftover mashed potatoes a savory twist by transforming them into golden, crispy waffles! Mixed with eggs and seasonings, these delightful potato waffles are quick to make and perfect for breakfast, brunch, or even a creative side dish. Their golden exterior and soft, flavorful interior make them a hit for any occasion!

Ingredients (for 4 waffles):

  • 2 cups mashed potatoes (leftover or freshly made)
  • 2 large eggs
  • 1/4 cup all-purpose flour (or gluten-free flour)
  • 1/4 cup shredded cheese (cheddar or Parmesan works well)
  • 2 tbsp green onions or chives, finely chopped
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika (optional)
  • Salt and black pepper, to taste
  • Non-stick cooking spray or butter, for greasing

Instructions:

  1. Heat your waffle iron according to the manufacturer’s instructions and lightly grease it with non-stick spray or butter.
  2. In a large bowl, combine the mashed potatoes, eggs, flour, cheese, green onions, garlic powder, smoked paprika (if using), salt, and pepper. Mix until well combined and smooth.
  3. Scoop about 1/2 cup of the potato mixture (or the appropriate amount for your waffle iron) and spread it evenly onto the waffle iron. Close the lid and cook for 4–6 min., or until the waffles are golden brown and crispy.
  4. Carefully remove the waffle and set it on a wire rack to keep it crisp. Repeat with the remaining potato mixture, greasing the waffle iron as needed.
  5. Serve warm with your favorite toppings, such as sour cream, hot sauce, shredded cheese, or a fried egg.

Method
