Creamy Potato Soup

With a smooth blend of broth, cream, and simple spices, this soup is comforting, hearty, and incredibly easy to make. Serve it with crusty bread or a fresh side salad for a satisfying meal. Enhance the flavor with toppings like shredded cheese, crispy bacon bits, or a dollop of sour cream.

Ingredients (for about 4 servings):

  • 3 cups leftover cooked potatoes (mashed, roasted, or boiled)
  • 2 tbsp unsalted butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1/2 cup heavy cream (or milk for a lighter version)
  • 1/2 tsp dried thyme
  • 1/4 tsp smoked paprika
  • Salt and black pepper, to taste
  • Chopped chives or green onions, for garnish

Instructions:

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until soft and fragrant, about 3–4 min.
  2. Stir in the leftover potatoes, breaking up any large chunks if needed. Add the broth, thyme, paprika, salt, and pepper. Bring the mixture to a simmer.
  3. Using an immersion blender, blend the soup directly in the pot until smooth and creamy. Alternatively, carefully transfer the mixture in batches to a countertop blender, then return to the pot.
  4. Stir in the heavy cream and simmer for another 5 min., allowing the flavors to meld. Adjust seasoning to taste.
  5. Ladle the soup into bowls and garnish with chopped chives or green onions. Pair with your favorite bread or crackers for dipping.

Method

  1. Boil the desired amount of small potatoes until tender.
