Breakfast Pizza with Fried Eggs

Breakfast pizza comes in countless variations, not just cold from last night's delivery leftovers. In this mouthwatering recipe, we top ours with fresh spinach, Gouda cheese and fried eggs.


Ingredients (serves 4):

  • 2 store-bought or homemade pizza doughs
  • 3/4 cup tomato sauce
  • about 7 large handfuls of fresh spinach leaves
  • 1 1/2 cups grated Gouda cheese
  • 8 eggs
  • Salt and pepper to taste

Instructions:

  1. Divide the dough into 4 portions and shape each into a circle. Pre-bake them in a pan with a little oil, raising the edges slightly.
  2. Spread tomato sauce over the dough. Wash and dry the spinach leaves, then place them on the pizza.
  3. Sprinkle grated Gouda cheese over the pizzas and crack two eggs on top of each pizza. Cover with a lid and cook until the eggs are set.
  4. Season with salt and pepper, transfer to a plate, and keep warm in the oven if desired until all 4 pizzas are ready.

Ingredients

  • Pizza Dough (homemade or store bought)
  • Shredded cheese
  • Pizza sauce
  • Cured ham, shredded
  • 4 eggs
  • Cherry tomatoes
  • Fresh basil

Method

  1. Roll out the dough
  2. Use a small bowl to cut the dough into rounds
  3. Add shredded cheese
  4. Place in oven on an oven tray afr 10 min at 355°F
  5. Put each dough round into a ramekin
  6. Add 1 tbsp pizza sauce, a handful of shredded cured ham 
  7. Break an egg into each pizza
  8. Top with sliced cherry tomatoes and a basil leaf
  9. Place in oven for another 15 mins at 355°F
  10. Garnish with parsley and a pinch of pepper
  11. Serve and enjoy!
