Spring rolls

Spring roll stuffing varies but often consists of ground meat, mushrooms, soy noodles, onions and carrots. Soak the rice paper wrappers in warm water, top with a tablespoon of stuffing and roll. Then heat a cup of oil in a saucepan or high-sided skillet until the oil is lightly smoking. Fry the spring rolls one by one, making sure to flip them halfway through. For the dipping sauce, mix 1 tablespoon of rice vinegar, 1 tablespoon of nuoc mam sauce, 4 tablespoons of water and shredded carrots.
