Although vegetables do contain carbohydrates, the percentage is usually very low. On average, the amount is about 5 grams of carbohydrates per 100 grams of vegetables. This proportion is so small that it does not affect blood sugar levels. If you're really trying to be strict, avoid starchier veggies, such as potatoes, green peas and corn. And replace starches with veggie-based substitutes, such as caulifower rice or zucchini noodles.

METHOD

  3. Peel the mango and slice into thin strips.
  4. Squeeze the juice from 2 limes into a bowl, and add olive oil, soy sauce, minced onion, salt and pepper.
  5. In a bowl, toss together the mango, carrot, rocket, and lime-soy dressing.
