If you like Japanese food, we're willing to bet you've eaten a big steaming bowl of ramen at least once in your lifetime. But what about this new brothless variety known as mazemen that's springing up in noodle houses everywhere? Its name literally means "mix noodles" and is essentially a no-broth alternative to ramen that allows you to mix the noodles with a bevy of different toppings, including oils and sauces galore. The sauce part is reassuring because dry noodles with dry toppings doesn't sound very appealing. It can be eaten hot or cold, although it's probably best eaten in hot weather when you don't feel like sweating into your bowl.
