Soft Cheeses

Hard cheeses will be OK in the fridge past the four hour mark, but soft cheeses will go bad. Blue cheese, mozzarella, cream cheese, cottage cheese, and the like need to be consumed quickly, so add them to salads, spread them on bread, or eat them with a little jam.
